摘  要:通过对云南地方传统软米资源与粘米和檑米的直链淀粉含量及蛋白质的积累动态进行比较研究。结果表明,3种类型的稻米在籽粒灌浆过程中直链淀粉积累表现基本一致,以开花后20 d为转折点,日平均积累速度前期积累速度快,后期积累速度较缓慢,直链淀粉积累速率的顺序为粘米>云南软米>括米;3种类型的稻米在籽粒灌浆过程中蛋白质积累动态基本相似,籽粒的蛋白质百分含量,灌浆开始最高,而后逐渐下降。蛋白质含量的日平均积累速度顺序为檑米品种>软米品种>粘米品种,与直链淀粉积累动态相反,籽粒直链淀粉和蛋白质积累之间可能有一定的矛盾关系。开花后30 d内是软米品质形成的主要时期,可以把开花后30 d内气象生态条件作为云南软米生态区划重要指标。Using some Yunnan local resources of traditional Soft rice, Sticky rice and Glutinous rice to compare the amylose content and pro- tein accumulation dynamic, the results showed that three types of rice amylose accumulation during the process of grain filling performance, after flowering 20 d in the average daily accumulation, early accumulation speed was fast, late accumulation speed was slow. The order of amylose accumulation rate was sticky rice 〉 yunnan soft rice 〉 glutinous rice. Three types of rice protein accumulation in the process of grain-filling dynamic basic were similar. Grain protein content was the highest in the grouting start, and was then gradually declining. Aver- age daily protein accumulation rate in order was glutinous rice varieties 〉 soft rice variety 〉 sticky rice varieties. On the other hand, amylose accumulation dynamics between the accumulation of amylose and protein of grain may have certain relations of contradictions. After flowering 30 d was the main period of soft rice quality formation, so we could put 30 d after flowering as important indicators of soft rice ecological districts in Yunnan.
