摘  要:测得野生干巴菌废弃料(干固形物)中总氨基酸态氮为0.376g/100g、总黄酮为6.158mg/g、多糖为1.587g/100g。研究了用木瓜蛋白酶、菠萝蛋白酶水解的优化条件及总黄酮、多糖的变化。结果表明。鲜干巴菌:水=1:4的条件下,酶水解最佳条件为:木瓜蛋白酶(≥800U/mg)≥0.75g/100mL、时间7h、pH值6.5、温度65℃,千圆形物中总氨基酸态氮为0.933g/100g,总黄酮3.868mg/g,多糖1.792g/100g;菠萝蛋白酶(300U/mg)1%-1.25%、时间7h、pH5、温度35℃,千固形物中总氨基酸态氮为0.772g/00g,总黄酮4.968mg/g,多糖2.192g/100g。木瓜蛋白酶表现了较好的水解效果。The contents of amino acid nitrogen, flavonoids, and polysaccharides of waste materials from wild Sparassia Thelephora ganbajim (dry substance) were 0. 376 g/100g, 6. 158 mg/g, and 1. 587 g/100g, respectively. The optimized conditions of enzymatic hydrolysis of the waste materials were studied by papain and bromelain through detection indicator of amino acid nitrogen, then the contents of flavonoids and polysaccharides were researched before and after hydrolysis. The optimal condition of enzymatic hydrolysis was determined as follows : papain ( ≥ 800 U/mg) ≥0.75 g/10OmL, hydrolysis time: 7 h, pH value =6.5, hydrolysis temperature: 65 ℃. Under the condition, the contents of amino acid nitrogen, flavonoids and polysaccharides in dry substance were 0. 933 g/100g, 3. 868 mg/g and 1. 792 g/100g. Bro- melain (300 U/rag) 1% - 1.25 %, hydrolysis time: 7 h, pH value =5, hydrolysis temperature: 35 ℃. The contents of amino acid nitro- gen, flavonoids and polysacoharides were 0, 772 g/100g, 4. 968 mg/g, and 2. 192 g/100g. Papain exhibits better in the enzymatic hydrolys.
