摘 要:以市购普通干红枣为原料,通过水浴浸提法获得大枣红色素。通过试验,选择提取大枣红色素的最佳提取溶剂,通过单因素试验探究提取红枣色素的最佳工艺条件。研究结果表明,选择粒度为60目的红枣粉末,以0.2 mol/L Na OH溶液为提取剂,在水浴温度为80℃,水浴时间为4 h,料液比为1∶40 g/m L,提取级数为2级时达到最佳提取效果。该研究为红枣红色素的开发利用提供基础。With the jujube as the material, the jujube red pigment was got with the extraction by the water bath leaching. The best extraction solvent for extracting the jujube red pigment was selected through the experiment. The optimum process conditions were selected through the single factor experiment. The experiment showed that the optimum conditions for extracting the jujube red pigment were as follows: 0. 2 mol/L NaOH as the extracting agent, the raw material size of 60 mesh, the extraction temperature of 80℃, the solid-liquid ratio of 1 : 40 g/mL and the extraction time of 4 h, extraction for 2 times. The study provided basis for the development and utilization of the red pigment.
