摘  要:速冻食品的干耗是影响速冻食品品质的重要因素之一。人们通过将速冻食品进行密封包装,以满足销售的需求及有效防止外界因素对速冻食品的干耗影响,但往往忽视了食品冷冻保鲜过程中温度波动过大所造成的食品干耗。本文针对带包装的速冻食品冷冻保鲜过程,论述了温度波动对食品干耗的影响,提出冷链硬件设施改造升级的技术要求及加强冷链流通管理确保食品品质的具体措施。Weight loss is one of the key factors affecting the quality of frozen food. By putting the frozen food into sealed packet, people try to improve the satisfy market demands and effectively prevent the effect of external factors on the weight loss of frozen food. However, the weight loss caused by excessive temperature fluctuations during the process of food freezing and preservation is often ignored. This paper focus on the influence of excessive temperature fluctuations on weight loss of frozen food with packaging on freezing preservation process, put forward specific measures to ensure food quality such as modifying and upgrading hardware facilities and strengthening the circulation management of cold chain.
