摘  要:文章采集了4个品牌12种市售果汁饮料:美汁源酷儿苹果汁、美汁源酷儿橙汁、美汁源酷儿葡萄汁、统一鲜橙多、统一葡萄多、统一水蜜桃、康师傅鲜果橙、康师傅每日C(葡萄汁)、康师傅水蜜桃、汇源100%橙汁、汇源100%葡萄汁和汇源100%苹果汁,采用间接碘量法对其中维生素C含量进行测定,分析讨论影响市售果汁饮料中维生素C含量的因素,并对市售果汁的每日饮用量进行了计算。结果表明:采集的12种市售果汁饮料中均含有维生素C,虽然与其标签值相比,相差了3.91%-9.46%,均明显偏低,但市售果汁饮料中维生素C的含量与其标签值还是有很大程度的符合,考虑到维生素C含量易受外界因素影响而降低,12种市售果汁饮料中维生素C含量与标签值相比偏低属于正常现象,在选购市售果汁饮料时,应主要以市售果汁饮料外包装上的标签值为参考,以生产日期较近者为优先,且市售果汁饮料的存储和饮用温度应低于50℃。每人每日所需维生素C为100 mg,以常温下测定的果汁饮料中维生素C含量为依据计算12种市售果汁饮料的每日饮用量,美汁源果汁的每日饮用量3.2瓶(约1400 m L),统一和康师傅果汁的每日饮用量为1.6瓶(约700 m L),汇源100%果汁的每日饮用量为0.2瓶(约100 m L)。12 kinds of commercial juice from four brands were collected in the paper: Meizhiyuan Apple Juice, Meizhiyuan Orange Juice, Meizhiyuan Grape Juice, Tongyi Orange Juice, Tongyi Grage Juice, Tongyi Peach Juice, Kangshifu Orange Juice, Kangshifu Daily C(grape juice), Kangshifu Peach Juice, Huiyuan 100 % Orange Juice, Huiyuan 100 % Grape Juice and Huiyuan 100 % Apple Juice. Indirect iodometry was chosen to determine the content of vitamin C in juices, the factors affecting the vitamin C content in juice were analyzed and discussed, and the maximum daily consumption amount of juice were also calculated, The results showed that: the collected commercial juices all contain vitamin C. However, the content of vitamin C in juices was dignificantly lower by 3.91 %-9.46 % than its label value. Considering the instability of vitamin C, this observation was normal. Still there was significant consistency between the content of vitamin C in juice and its label value. It was suggested that the label value of vitamin C had reference value, the latest production should be chosen for the purchase of juices, and the temperature of storing and drinking juice should be lower than 50 ℃. The daily requirement of vitamin C was 100 mg for a person. Based on the measurement of vitamin C in juices at room temperature, the maximum daily consumption amount of Meizhiyuan juices were 3.2 bottle(about 1400 m L), Kangshifu and Tongyi juices were 1.6 bottle(about 700 m L), Huiyuan 100 % juices were 0.2 bottle(about 100 ml).
