摘 要:目的 了解西安市市售食品中金黄色葡萄球菌(Staphylococcus Aureus,SA)的污染状况,为预防和控制食源性疾病提供科学依据。方法 依据《国家食源性致病菌监测网工作手册》的方法对2013-2015年西安市市售14类食品进行SA的鉴定和分析。结果 共检测食品14类792份,检出SA66株,总检出率为8.33%。SA检出率最高的食品种类为生肉及生肉制品(27.62%),其次是沙拉(22.73%),速冻米面(12.50%);散装食品SA的检出率为10.67%,高于定型包装食品(3.49%),差异有统计学意义(χ-2=11.759,P〈0.05);农贸市场抽检食品SA的检出率高达29.23%,集体食堂SA的检出率最低为1.27%,不同场所食品中SA检出率差异有统计学意义(χ-2=51.125 P〈0.05);10个区县中,未央区SA的检出率(21.67%)高于其他区县。结论 西安市市售食品中SA的污染比较严重,应加强食品卫生的监督,确保人民群众的食品安全。Objective This study was to understand the contamination status of Staphylococcus aureus (SA) in commercially available food in Xi'an City and to provide scientific basis for the prevention and control of food-borne diseases. Methods The identification and analysis of SA from 14 kinds of food in Xi'an city from 2013 to 2015 were carried out according to Manual of National Food-borne Pathogenic Bacteria Monitoring Network. Results A total of 792 samples from 14 kinds of food were inspected. 66 strains of SA were identified, with a total detection rate of 8.33%. Among all kinds of food, meat products had the highest detection rate of 27.62%, followed by salad (22.73%) and frozen rice food (12.5%). The SA detection rate among food in bulk was 10.67%, higher than that of the packaged food (3.49%). The difference was statistically significant( E2= 11.759, P〈 0.05 ). The detection rate of SA in food samples from farmers' market was as high as 29.23%, and the lowest detection rate was 1.27% in canteens. There was significant difference in SA detection rate in different places (X2=51.125 ,P〈0.05). Of all 10 districts and counties, the SA detection rate in Weiyang District was the highest. Conclusion The status of SA contamination was serious in commercial food in Xi'an City. The supervision of food hygiene should be strengthened and food safety should be ensured to people.
