摘 要:1-MCP(l-甲基环丙烯)是一种新型的的乙烯抑制剂,通过阻断乙烯与受体蛋白的结合,抑制乙烯诱导果实成熟与衰老,延缓植物叶片、花和芽器官的衰老和脱落,从而控制花卉、水果和蔬菜的成熟和衰老,对园艺作物的采后贮藏、货架寿命以及保持商品品质有显著的影响。笔者就1-MCP的性质及作用机制、1-MCP对果蔬的影响、影响1-MCP处理效果的因素以及1-MCP国内外研究现状进行了总结分析,并提出应用中存在的问题及其今后的主要研究方向,为进一步扩大1-MCP在果蔬中的应用提供理论依据。1-MCP (1-Methylcyclopropene) is a new type of ethylene inhibitor. It can control maturity and senescence of flowers, fruits and vegetables by blocking the binding of ethylene receptor protein, inhibition of ethylene induced fruit ripening and senescence, delaying senescence of plant leaves, flowers and bud organs .It has significant effects on horticultural crops of postharvest storage, shelf life and product quality. In this paper, the influence of properties and mechanism of action of 1-MCP on fruit and vegetable, the influence of 1-MCP processing effect factors and 1-MCP at home and abroad research status were summarized and analyzed, and the problems existing in the application and the future research direction were put forward, thus providing theoretical basis for further expanding the application of 1-MCP in fruits and vegetables.
