摘 要:目的了解广州市即食食品的卫生状况,为卫生监督部门提供准确有效的方向,以预防食源性疾病的发生。方法根据2013年国家食品安全风险监测计划及广东省食品安全监测方案的要求,对全市12个区、县级市包含三类产品432份即食食品样本进行检测。结果 2013年广州市即食食品的污染问题比2012年更为严重,有近3倍的增长,其中最严重的是中式凉拌菜,合格率仅为10.0%;菌落总数、大肠菌群超标现象普遍,合格率只有17.2%;致病菌检出金黄色葡萄球菌11株,副溶血弧菌和创伤弧菌各6株,致泻大肠埃希氏菌5株,单增李斯特菌3株,沙门氏菌1株。结论食品清洁度指标超标情况严重,容易发生食源性疾病,应加强监督管理。Objective Understand the Health Status of ready - to - use food in Guangzhou City, in order to setup a more sensi- tive and specific standard for preventing the development of food origin disease. Methods According to the requirement of Na- tional foods safe risk monitoring plan and food safe monitoring project in Guangdong Province, inspected and measured total 432 ready- to- use foods in three classification in Guangzhou City, including 12 districts and county -level cities. Results The contaminated problems in 2012 are severer than in 2013 in ready - to - use food. There are closely three times increase. The most serious food is Chinese cold dishes. The pass rate is only 10. 0%. The presence of out of limits is very common in the total num- bers of colony and coliform group. The pass rate is 17.2%. There are 11 cases in staphylococcus aureus, 6 cases in Vibrio para- hemolyticus and Vibrio vulnificus separately, 5 cases in diarrheogenic escherichia coli, 3 cases in Listeria monocytogenes and 1 case in salmonella in pathogenic bacteria tests. Conclusion It is serious in food contaminant. It is easily to cause food origin diseases, so it needs more supervision and administration.
