摘　　要：目的：建立紫外分光光度法（UV法）快速测定金针菇粉末中麦角甾醇含量。方法：以无水乙醇为提取溶剂，40℃超声15min提取一次，检测波长292nm。结果：麦角甾醇线性范围为5．00-50．00μg／mL．相关系数为O．9995，平均回收率（n=9）为105．31％，样品在24h以内稳定。结论：本方法的线性关系、精密度、稳定性、重复性及精密度均良好，为一种可快速测定金针菇等食用菌中麦角甾醇的测定方法。Objectic： To establish an Ultraviolet spectrophotometry （UV method） for rapid quantitative determination of ergosterol in enoki mushroom. Method： The sample was ultrasonic extracted by alcoholat in 40 ℃ for 15 minutes for 1 time. The detection wavelenth was 292 nm. Results： The liner ranges of ergosterol were 5.00-50.00 μg·mL-1 （r=0.9995）, respectively. The average recoveries （n=9） of ergosterolin in enoki mushroom powder was 105.31%, respectively. The sample is stable in 24 hours. Conclusion： The above established method is simple, reliable, stable and accurate, which can be used to determine the ergosterol in the enoki mushroom powder rapidly.
