摘  要:目的了解居民对营养标签的知信行情况及相关膳食消费行为,为开展膳食指导提供依据。方法以广州市11个区拥有固定电话家庭中16岁以上的常住居民为调查对象,采用电话调查的方式进行问卷调查。结果居民能理解营养标签部分或全部信息者有40.5%,50.9%的居民不知道营养标签是否应该标明反式脂肪(酸)的含量。居民获取营养信息的渠道主要是电视。居民对食品标签关注度最高的是生产日期及保质期,对营养标签阅读率为21.5%,不看营养标签的主要是因为看不懂,认为营养标签可信或基本可信为44.9%。66.4%的居民表示看了营养标签后可能会影响购买计划。多重对应分析中,关注食品营养标签组中以女性、文化程度高、低年龄、会摄入零食、网购食品及在饮品店购买食品的群体为主;不关注食品营养标签组中则以男性、文化程度低、高年龄、从不吃零食、也不会网购食品及在饮品点购买食品的群体为主。结论居民对食品营养标签的知晓率不高,对营养标签的关心、理解和信任度有待提高,不同的食品营养标签关注度中存在性别、年龄、文化程度及膳食消费行为的差异,需继续加强对居民的营养教育,并在重点人群中开展有针对性的营养知识普及工作。Objective To understand residents' knowledge, attitude and practice towards nutrition labels and their behaviors of food consumption in Guangzhou, and provide gist for carrying out dietary guidance. Methods Home tele- phone interviews were conducted on permanent residents over 16-year-old in 11 districts of Guangzhou. Results 40. 5% of Guangzhou residents could understand some or all the information on nutrition labels. 50. 9% of residents didn' t know wheth- er trans-fatty acids should be labeled on nutrition labels at all. The main way for residents getting nutrition information was from television. Residents paid highest attention on production and expiration date of food labels. The read rate of nutrition la- bels was only 21.5% , and the common reasons for not reading them were residents couldn't understand the nutrition la- bels. 44. 9% of residents thought nutrition labels were substantially or completely credible and 66. 4% of residents showed their consumption plan would be influenced after reading nutrition labels. In the homogeneity analysis, most of the residents who paid more attention to the nutrition labels were female, higher educated, lower aged, and would eat snacks and pur- chase food from Internet or drinks shop, while group paid no attention to the nutrition labels mainly was male, lower educat- ed, higher aged, and would never eat snacks or purchase food from Internet and drinks shop. Conclusion Guangzhou resi- dents' nutrition labeling cognition degree is low, also the attention, comprehension and credibility of the nutrition labeling still remains to improve. Besides, there are evident differences above attention among different sexuality, educational back- ground, age or behaviors of food consumption. Specific nutrition education intervention should be enhanced to guide residents to select beneficial food and keep healthy eating lifestyle.
