摘  要:研究了玉米苞叶多糖的提取、初步纯化和体外抗氧化活性。采用水提醇沉法制备玉米苞叶多糖;三氯乙酸法和透析法纯化玉米苞叶粗多糖;以维生素C(Vc)为阳性对照,测定玉米苞叶多糖的总还原力、清除羟基自由基和DPPH自由基的能力,综合比较分析纯化前后玉米苞叶多糖体外抗氧化活性的变化。结果表明,纯化后多糖含量由25.08%上升至55.48%。玉米苞叶多糖具有一定抗氧化活性,随质量浓度增加,呈良好量效关系;纯化可能破坏多糖结构,纯化后抗氧化活性不及粗多糖。玉米苞叶中含有多糖,且有一定抗氧化活性,具有一定开发潜力。Corn bract is rich in anthocyanins, anthocyanins and other flavonoids, and a variety of trace elements, which has the function of inhibiting α-glycosidase, regulating blood lipid, inhibiting atherosclerosis and preventing cardiovascular diseases. In this study, the extraction and purification of polysaccharides from corn bract (PCB) were investigated and the antioxidant activities of polysaccharides were also examined. PCB was prepared by the method of water extracting-alcohol precipitating, and purified by trichloroacetic acid and dialysis. The antioxidant activities of PCB, including total reducing power, hydroxyl radical-scavenging, and DPPH radical scavenging were tested while Vitamin C (Vc) was as positive control, and the antioxidant activities of PCB were also compared with the crude polysaccharides. The PCB content was increased from 25.08% to 55.48% after purification,PCB exhibited certain antioxidant activities,but inferior to Vc. There was concentration-response relationship between concentration and antioxidant activities, and the activities of purified PCB was inferior to the crude PCB, which indicated that purification might destroy the chemical structure of PCB or the phenolic compounds with strong antioxidant activity were removed during purification. It was concluded that the corn bract contained polysaccharides, which displayed certain antioxidant activities, and had potential for the further development.
