摘 要:桑黄(Phellinus baumii.)是一种食药用真菌,利用沸水可提取其子实体抑菌成分。通过选取乳制品中常见的、具有代表性的有害指示菌,研究了不同浓度的桑黄水提物对革兰氏阳性菌、阴性菌,霉菌和酵母的抑制作用。研究发现:桑黄水提物在1—10 mg/mL作用浓度下,实现了对牛乳中有害细菌、真菌有效的抑制,能显著控制巴杀牛乳中菌群总数的变化,同时对有益菌无显著影响,相对Nisin等抑菌剂具有广谱抑菌性。Phellinus sp. is a highly-valued medicinal mushroom. Antimicrobial constituents were extracted through the boiling water. The typical harmful indicators bacteria existed in dairy products were selected. The different concentrations of the sample were studied in the bacteriostatie action of bacteria, yeast and mildew. The results showed that the Phellinus baumii aqueous extracts restrained the growth of harmful bacteria, mold and yeast in milk effectively under the 1--10 mg/mL concentrations. The total numbers of bacteria in milk were effectively controlled. At the same time there was no harm to the beneficial bacteria, the sample has a broad spectrum antimicrobial resistance compared with Nisin.
