摘  要:食品中非法添加硼砂会给消费者的身体健康带来巨大危害,为对食品中非法添加的硼砂进行现场快速检测,利用单因素试验优化了硼砂快速检测试纸条的配方和工艺。结果表明:质量浓度为5 g/L姜黄素乙醇溶液、pH值6.0、调整溶液最终聚乙烯吡咯烷酮(PVP)质量浓度为1 mg/L、浸泡1 min、自然阴干条件下制作的硼砂快速检测试纸条保存期可达1年,最低检测限为20mg/kg,检测限远低于当前市售试纸条。检测时应排除Ca^(2+)、CO_3^(2-)、HPO_3^-和I^-等离子可能对试纸条检测产生的干扰。利用优化后的试纸条对超市购买的腐竹、豆干、即食扇贝和面皮进行了检测,其中,腐竹、豆干、即食扇贝中检出了硼砂。该研究建立的硼砂定量试纸检测法检测结果与电感耦合等离子体质谱仪(ICP-MS)检测结果相近,具有良好的可靠性。Illegal addition of borax in foods is harmful to the health of consumers. To on-site rapid detect illegal addition of borax in food, this study optimized the formulation and technology of the rapid detection of borax strip. The optical conditions of borax strip were curcumin ethanol solution 5 g/L, pH value 6.0, polyvinylpyrrolidone 1 mg/L, soaking time 1 min, and natural drying. The storage period of borax strip was one year. The limit of detection was 20 mg/kg, which was better than the current commercial borax strips. The positive ion Ca^2+ and negative ion CO32, HPO3, and I might cause interference in the strip test. What's more, this strip method was consistent with the inductively coupled plasma mass spectrometry (ICP-MS) method, which promised a good prospect of application. We also tested Yuba stick, dried bean curd, instant scallop and wrapper by the optimized borax strip, of which, borax was checked out in the Yuba stick, dried bean curd, and instant scallop.
