摘 要:以发芽前后的亚麻籽为原料,测定其中的氨基酸、维生素、还原糖、粗纤维、灰分等常规物质以及植酸、γ-氨基丁酸、阿魏酸、香豆酸、总黄酮、芦丁等活性物质。结果表明,发芽后亚麻籽中氨基酸总量、维生素B组、粗纤维、植酸、γ-氨基丁酸、阿魏酸等含量增加明显;维生素A,D,C,K_1未检出;维生素E、还原糖、灰分、香豆酸、总黄酮等含量减少。发芽前后亚麻籽中营养活性物质的变化情况可为后续加工应用过程中提供产品设计思路和方向,从而开发出有针对性的高附加值产品。In this experiment, the flax seed before and after germination was chosen as the raw material, determination of conventional materials such as amino acids, vitamins, reducing sugar, crude fiber, ash and other active substances such as phytic acid,γ-aminobutyric acid, ferulic acid, coumaric acid, total flavonoids, rutin, and so on. The results showed that nutritious materials and active compositions consisted of the total amino acids, vitamin B, crude fiber, phytic acid, γ-aminobutyric acid, ferulic acid increased obviously.Vitamin A, D, C, K1 were not checked out. The amount of vitamin E, reducing sugar, ash, coumaric acid and the total flavonoids reduced.The increasing or decreasing the levels of material before and after germination could provide product design ideas and directions for subsequent processing and application, thus developing targeted high value-added products.
