摘　　要：乌骨鸡是我国特有的国家级保护药食两用家禽,因其体内含有丰富的营养成分和生物活性物质,受到古今中外研究者的关注,并进行了相关研究。文章对乌骨鸡活性肽的制备及其生物学活性进行综述,为进一步开发利用乌骨鸡提供理论参考。Black-bone Silky fowl is a kind of food and medicinal poultry in China. The research on Black-bone Silky fowl in medical and food fields have received much attention because of its special medical function and components. Peptide is a effective component of Black-bone Silky fowl. This paper summarized the development of preparation and bioactivity of the active peptide from Black-bone Silky fowl, which provided some references for further research, development and utilization.
