摘  要:测定了鸡腿菇ZMM-3菌株子实体中的营养成分,并将其与栽培种A260菌株进行了对比。结果表明,ZMM-3菌株子实体中水分、粗蛋白、粗脂肪含量与A260菌株接近,但粗纤维、还原糖和多糖含量差异显著;ZMM-3菌株的8种必需氨基酸含量占氨基酸总量的38.73%,高于A260菌株;除Na元素外,A260菌株子实体的Mg,K,Ca和Fe含量均高于ZMM-3菌株。The contents of nutrition components in a wild Coprinus comatus were determined and compared with strain A260. The results indicated that the contents of moisture, crude fat, and crude protein were similar with strain A260, but the contents of crude fibre,reducing sugar and polysaccharides were different with strain A260. The essential amino acid accounted for 38.73% of total amino acids in ZMM-3 strain, which was higher than that of strain A260. Beside Na, the content of Mg,K,Ca and Fe in ZMM-3 strain were lower than that of A260 strain.
