摘  要:以厚皮甜瓜果实为试材,研究了采后分别用100 mmol/L硫胺素、1.0 mmol/L核黄素(含0.05%的Tween-80)溶液浸泡处理10 min对常温贮藏甜瓜果实活性氧代谢的影响。结果表明:硫胺素和核黄素处理均提高了果实抗坏血酸过氧化物酶(APX)、过氧化氢酶(CAT)、过氧化物酶(POD)、谷胱甘肽还原酶(GR)活性,抑制超氧阴离子(O_2^-·)产生速率,增加了甜瓜果实中过氧化氢(H_2O_2)含量和还原型谷胱甘肽含量(GSH)。由此表明,采后适宜浓度的硫胺素、核黄素处理可诱导甜瓜采后抗氧化酶活性提高,有效维持活性氧代谢的平衡。Muskmelon fruit were used as materials to study the effect of postharvest 100 mmol/L thiamine or 1.0 mmol/L riboflavin dipping treatment for 10 min on reactive oxygen species metabolism during storage at room temperature.The results indicated that postharvest thiamine and riboflavin treatments significantly enhanced the activity of ascorbic peroxidase(APX) , catalase(CAT), peroxidase (POD)and glutathione reductase (GR), decreased O2^-·production rate, and also increased the content of hydrogen peroxide ( H2O2 ) and reduced g|utathione ( GSH). These results suggested that postharvest thiamine and riboflavin treatment at optimal concentration could induce the increase of antioxidant enzymes activity and maintain the balance of reactive oxygen species metabolism in muskmelon fruit.
