摘 要:目的了解2012年-2015年湛江市出口罗非鱼中微生物污染状况,为该类产品监管提供参考依据。方法采用GB 4789系列微生物检验方法,检测待出口罗非鱼中菌落总数、大肠菌群、沙门菌、单核细胞增生李斯特菌、副溶血性弧菌及霍乱弧菌,并对2012年-2015年微生物检验结果进行总结分析。结果共检验5 607份罗非鱼类产品,菌落总数污染量均<5×10~5cfu/g,不超标;大肠菌群超标率为2.70%;沙门菌、单核细胞增生李斯特菌、副溶血性弧菌和霍乱弧菌的检出率分别为0.20%、2.81%、0.80%和0.51%。结论湛江市出口罗非鱼类产品中存在不同程度的微生物污染,单核细胞增生李斯特菌的污染尤为严重,应该引起重视。Objective To realize the situation of microbial contamination in tilapia for exportion in Zhanjiang,so as to provide basis for product supervision.Methods The methods of microbiological examination in GB/T 4789 were used to detect the aerobic plate count,coliforms,Salmonella,Listeria monocytogenes,Vibrio parahaemolyticus and Vibrio cholerae in tilapia for exportion,and the detection results from 2012 to 2015 were analyzed.Results 5 607 samples were detected,and the aerobic plate count was under 5 × 10^5 cfu/g and consistented with the standard; the exceeding rate of coliforms was 2.70%; the detection rates of Salmonella,Listeria monocytogenes,Vibrio parahaemolyticus and Vibrio cholerae were 0.20%,2.81%,0.80% and0.51%,respectively.Conclusion There is different degrees of microbial contamination in exported tilapia in Zhanjiang,especially the contamination of Listeria monocytogenes,which should arouse people's attention.
