摘  要:研究槟榔汁喷雾干燥工艺条件。在单因素试验基础上,选取进风口温度、进料量、空气流量3个因素的3个水平进行正交试验,得到槟榔汁喷雾干燥工艺的优化组合条件为进风口温度190℃、进料量25 m L/min、空气流量为700 L/h。在此条件下所得产品的总生物碱含量、水分含量、出粉率分别为0.459%、5.17%和88.6%。The optimum technological conditions for spray drying of juice of areca nut (Areca catechu) were studied. A single factor experiment was arranged for spray drying of the areca nut juice, based on which the inlet air temperature, feeding rate and airflow rate were selected for an orthogonal test with three factors at three levels. The conditions for spray drying of the areca nut juice were optimized. The optimum conditions for spray drying of the areca nut juice included an inlet air temperature of 190 C, a feeding rate of 25 mL/min, and an air flow rate of 700 L/h. Under these optimum conditions, the areca nut juice was spray dried to produce powder containing 0.459% of total bio-alkaloids and 5.17% of moisture with a powder output rate of 88.6%.
