山东东南沿海绿茶香气成分的GC-MS分析

摘　　要：为了明确山东东南沿海绿茶的香气成分,分别在山东省临沂市莒南县的朱芦镇、洙边镇以及日照市的虎山镇、巨峰镇、后村镇5个地区采集绿茶,以南方代表性绿茶大佛龙井为对照,以无水乙醚做萃取溶剂,采用SDE法并结合GC-MS技术,测定了不同产地绿茶香气成分的相对含量,并分析了2类绿茶香气成分的差异。结果表明:从5种山东绿茶中共鉴定出52种主要挥发性化合物,包括8种醇、9种酯、2种酮、4种醛、6种烯、3种苯、4种烷、3种杂环类化合物、2种胺、1种萘和10种其他化合物,其中,含量较多的成分是邻苯二甲酸二异丁酯、棕榈酸甲酯、己二酸二辛酯、叶绿醇、芳樟醇(其中前3种主要物质为增塑剂和抗氧化剂)。山东绿茶与龙井绿茶的香气显著不同,除含有龙井绿茶中的常见香气成分芳樟醇、顺式橙花叔醇、叶绿醇、棕榈酸甲酯、亚油酸甲酯、吲哚、苯乙醛、杜松烯等外,还含有其特异性香气成分18种,如香叶醇、苯甲醛等,这些独特的香气成分可能是山东绿茶浓郁粟香的主要物质基础和独特风味形成的原因。In order to analyze the aroma components of green tea collected from Zhulu Town,Zhubian Town in Iinyi City,Huanshan Town,Lanshan District Jufeng Town and Houcun Town in Rizhao City,Shandong Province.And at the same time the representative green tea Longjing aroma components were compared.In this study,using anhydrous ethyl ether as the extraction solvent,SDE method combined with GC-MS technology.The results showed that 52 kinds of main volatile compounds were identified from 5 kinds of Shandong green tea,there were 8 kinds of alcohols,9 kinds of esters,2 kinds of ketones,4 kinds of aldehydes,6 kinds of alkenes,3 kinds of benzene,4 kinds of alkanes,3 kinds of heterocyclic compounds,2 kinds of amines,the1 kind of naphthalene,and the other 10 compounds.The study found the unique aroma ingredients of Shandong green tea,and proved that the aroma was significantly different with Longjing green tea.These unique aroma components may be the main material base and unique flavor formation of Shandong green tea.
