摘  要:目的检测牦牛肉、风干牦牛肉及牦牛乳中甲状腺激素,探讨藏族群众通过牦牛肉、风干牦牛肉及牦牛奶等摄入甲状腺激素的可能性。方法采用磁酶免化学发光法检测牦牛肉、风干牦牛肉和牦牛乳中T4含量;同时采用《食品碘检测方法》(WS302-2008)检测风干牦牛肉中碘含量,ICP-MS检测游离碘,计算蛋白结合碘和T4含量。结果新鲜牛肉中T4均值为29.2μg/㎏,范围在8.80~47.8μg/㎏;风干牛肉中T4均值为36.6μg/㎏,范围在11.6~46.63μg/㎏;风干牛肉中总碘均值为85.5μg/㎏,范围在63.7~108.8μg/㎏,蛋白结合碘均值为25.8μg/㎏,与直接测得的T4结果相符;牛奶中T4均值为38.6μg/L,范围在23.6~53.06μg/L。结论青海藏族人群通过食用牦牛肉、风干牦牛肉及牦牛乳摄入了碘和甲状腺激素,可以弥补因食用非碘盐而导致的碘缺乏。Objective The aim of this study was to discuss the possibility that Tibetan could ingest iodine and thyroid hormones from beef and milk, by establishing a quantitative determination of thyroid hormones in yak meat, air-dried yak meat and yak milk. Methods T4 was determined with chemiluminescence immunoassay method in the fresh and air-dried yak meat as well as yak milk. Meanwhile, according to "method of iodine in food determination (WS302-2008)", the total iodine in air-dried yak meat was determined. The free iodine was determined with ICP-MS and the protein bound iodine and T4 content were calculated. Results The mean of T4 in fresh yak meat was 29.2 μg/kg, ranging from 8.80 to 47.8 μg/kg. The mean of T4 in air-dried yak meat was 36.6 μg/kg, ranging from 11.6 to 46.63 μg/kg. The mean of total iodine in air-dried yak meat was 85.5 μg/kg, ranging from 63.7 to 108.8 μg/kg. The mean of protein bound iodine was 25.8 μg/kg,which was coincident with the result of T4 determination. The mean of T4 in yak milk was 38.6μg/L, ranging from 23.6 to 53.06 μg/L. Conclusion The results suggested that Tibetan ingested iodine and thyroid hormones from yak meat, air-dried yak meat and yak milk,which possibly compensated for the iodine deficiency without eating iodine salt.
