摘  要:总糖含量是评价葡萄酒、果酒的重要理化指标之一。直接滴定法是测定总糖的一种常用方法,在该方法总糖试样制备过程中,样品加入盐酸溶液,经水浴水解后,需用氢氧化钠溶液中和至中性,此处可采用指示剂法和pH试纸法两种方法来判断溶液是否为中性。通过实验得出结论,两种方法的误差均在允许范围内,指示剂法根据溶液的颜色变化,可更加准确快速简洁直观的将溶液调节为中性,避免溶液浪费造成的结果误差,所测定结果更加接近真实值;但是指示剂法是利用溶液颜色判断pH的方法,不适合颜色较深或者对指示剂显色有影响的酒样,所以对于颜色较深或者对指示剂显色影响较大的酒样宜选择pH试纸法。Of the total sugar content is appraises one of the grape wine, ratafia important physics and chemistry targets. The direct titrimetric method is determines the total sugar one commonly used method, in this method total sugar test specimen preparation process, the sample joins the hydrochloric acid solution, after the water bath hydrolisis, needs the caustic soda solution neutral to the neutrality, here may use the indicator law and the pH indicator paper law two methods judges the solution whether is the neutrality. Draws the conclusion through the experiment, two method errors in the permission scope, the indicator law basis solution color change, may more accurate fast succinct direct-viewing the solution adjustment be the neutralities, avoids result error which the solution waste creates, determines the result to be closer the real real value; But the indicator law is judges pH using the solution color the method, not the suitable color is deep or to the indicator coloration influential liquor type, therefore is deep regarding the color or chooses the pH indicator paper law suitably to the indicator coloration influence big liquor type.
