摘  要:食源性致病菌与人类健康密切相关,食源性疾病爆发造成的社会经济损失不可估量。荧光纳米材料具有小尺寸效应、独特的荧光性能以及可以与各种类型检测方法相结合对食源性致病菌进行检测的特性,使得其在近几年来发展迅速。可用于食品安全领域的荧光纳米材料主要有量子点(quantum dots)、复合荧光二氧化硅纳米颗粒(the compact fluorescent silica nanoparticles)、金纳米簇(gold nanoclusters)和碳量子点(carbon quantum dots)4种。本文主要综述了这4种不同荧光纳米材料的特点及优势、荧光颗粒制备方法及在食源性致病菌检测领域的应用。Foodborne pathogenic bacteria are closely related to human health. Social and economic losses caused by foodborne disease outbreak are immeasurable. Fluorescent nanomaterials have characteristics such as small size effect, unique fluorescent properties and the ability to combine with various kinds of detection methods for detecting foodborne pathogens, which make fluorescent nanomaterials develop rapidly in recent years. Fluorescent nanomaterials which can be used in the field of food safety mainly include quantum dots, the compact fluorescent silica nanoparticles, gold nanoparticle cluster and carbon quantum dots. This review summarized the characteristics and advantages of 4 kinds of fluorescence nanomaterials, preparation methods of fluorescent particles and their applications in the detection of foodborne pathogenic bacteria.
