摘　　要：栀子作为一种大宗的中药材,含油率在12%以上,栀子油中含有丰富的不饱和脂肪酸,是一种很好的营养物质。对栀子油的化学成分、提取工艺以及功效的研究现状进行综述,旨在为栀子油功能产品的开发提供一定的理论基础和依据。As a kind of commonly used traditional Chinese medicine, the oil content of Gardenia jasminoides Ellis is above 12%. Gardenia jasminoides Ellis oil contains rich unsaturated fatty acid, which is a kind of good nutrients. The chemical component, extraction process and function of Gardenia jasminoides Ellis oil were summarized so as to provide certain theoretical foundation and basis for the development of functional product of Gardenia jasminoides Ellis oil.
