摘 要:对产自贵州的小粒薏仁谷和老挝的大粒薏仁谷及其初加工产品中重金属含量进行检测及对比。结果表明,薏仁谷初加工产品的重金属污染增幅较大。经单项污染指数评价,薏仁谷及初加工产品中As、Pb、Cd和Hg除小薏仁糠Pb外均低于0.7,属于无污染范围;Cu、Zn和Mn在薏仁糠中则存在一定污染,小粒薏仁糠分别为1.03、2.22和1.72,大粒薏仁糠分别为0.58、6.88和3.46;薏仁谷及初加工产品中Fe污染较为严重,小粒和大粒薏仁谷及其初加工产品的单项污染指数均大于1(1.22~21.76)。从初加工产品看,薏仁精米的8种重金属检出值较低,但薏仁糠污染较重,8个重金属元素的检出值均较高,其深加工产品存一定安全隐患。The amounts of heavy metals in shortgrained coix seed from Guizhou, macroaggregated coix seed from Laos and their preliminary processing products were detected and compared. The results showed that the incremental amount of heavy metal pollution in the preliminary processing products of coix seed were comparatively large. Through single pollution index evaluation, the As, Pb, Cd and Hg in preliminary processing products and coix seed grain were lower than 0. 7 except Pb in shortgrained coix bran, which is within the non - pollution scope. There were certain pollution of Cu,Zn and Mn in coix seed bran. The indexes were respectively 1.03,2.22 and 1.72 in shortgrained coix seed bran and 0. 58,6.88 and 3.46 respectively in macroaggregated coix seed bran. The pollution of Fe was relatively serious in coix seed and its preliminary processing products. The single pollution index in shortgrained coix seed, mac- roaggregated coix seed and their preliminary processing products were all greater than 1 ( 1.22 - 21.76 ). From the perspective of preliminary processing products, the detection value of 8 heavy metals in polished rice of coix seed were comparatively low. However, the pollution in coix seed bran was relatively heavy and the detection value of 8 heavy metals were comparatively high. There was potential safety problem in its deep processing products.
