摘  要:目的了解乌鲁木齐市畜禽肉储存与销售环节细菌的污染状况,为细菌引起的食源性疾病的防控提供依据。方法依据食品安全国家标准中相关食品微生物检验标准和《全国食源性致病菌监测工作手册》,对乌鲁木齐市部分畜禽肉储存库、超市及农贸市场进行随机采样检测。结果在200份样品中共检出20株致病菌,总检出率为10.0%。其中沙门菌检出率最高,为4.5%,其次为单核细胞增生李斯特菌(2.5%),检测过程中未发现大肠杆菌O157∶H7。结论乌鲁木齐市畜禽肉储存与销售环节不同程度受到沙门菌和单核细胞增生李斯特菌的污染,以生鸡肉污染最严重。应加强禽畜屠宰、畜禽肉加工及销售等过程产品的检疫、检测及卫生监管,减少食源性疾病的发生。Objective To understand the contamination status of livestock and poultry meat in storage and sale link in Urumqi, so as to provide basis for the prevention and control of food - borne diseases caused by bacteria. Methods According to the na- tional standard of food safety in food microbiology inspection standard and the Standard Operation Procedure of the National Sur- veillance on Food - borne Pathogens, random samples from some livestock and pouhry meat store, supermarket and farmers mar- ket were collected and detected in Urnmqi. Results 20 strains of pathogens were detected from 200 samples, and the total de- tection rate was 10.0%. Among them, the detection rate of Salmonella was as high as 4.5% , followed by Listeria monocyto- genes(2.5% ) , and Escherichia coli O157 : H7 was not detected. Conclusion The livestock and poultry meat in storage and sale link were contaminated in different degrees by Salmonella and Listeria monocytogenes in Urnmqi, and the raw chicken was the most seriously contaminated. The quarantine, detection and hygiene supervision of products in livestock and poultry slaughter, processing and sales of livestock and poultry meat should be strengthened to reduce the incidence of food - borne diseases.
