摘 要:以银叶树果壳为原料,考察提取工艺对其蛋白质得率的影响。通过单因素试验考察了液料比、Na OH浓度、提取温度、提取时间等四个因素,根据Box-Benhnken试验设计和响应面分析法确定银叶树果壳蛋白提取的最佳工艺条件。结果表明:银叶树果壳蛋白的最佳提取条件为液料比32∶1(m L/g);Na OH浓度22mg/m L;提取温度50℃;提取时间4h。在此条件下蛋白质得率为4.89%。银叶树果壳蛋白的吸水性、起泡性优于大豆分离蛋白,而吸油性、乳化能力、乳化稳定性、泡沫稳定性均不如大豆分离蛋白。Heritiera littoralis shell was used to extract protein. The effect of extraction process on the yield of protein was studied. Solid-to-liquid ratio, sodium hydroxide concentration, temperature and extraction time were determined by single-factor test. The optimum extraction conditions were determined according to the Box-Behnken test design and the response surface methodology. It showed that the optimum extraction conditions were : solid-to-liquid ratio 32 : 1 (mL/g), sodium hydroxide concentration 22mg/mL, temperature 50℃, extracting time 240min. Under the above conditions, the yield of protein was 4.89%. The absorption and foaming of Heritiera littoralis shell protein were better than that of Soy Protein isolates, while the oil absorption, emulsifying ability, emulsifying stability and foam stability were not as good as that of soybean protein isolate.
