摘 要:分别采用乙醇沉淀法和酸碱提取法制备车前草水溶性和水不溶性膳食纤维,并对膳食纤维功能进行了初步探索。研究了膳食纤维的膨胀力、持水力,分别对灰分、水分进行测定,以及膳食纤维对胆酸钠和NO_2^-的吸附能力的作用测定。结果表明,车前草膳食纤维具有较大的持水力和膨胀力,对胆酸钠和NO_2^-均具有较明显的吸附能力。Water soluble and water insoluble dietary fiber from Lettuce leaf were treated with ethanol precipitation method and acid-base extraction, and the preparation and functional properties of dietary fiber were studied. The dietary fiber water holding capacity, swelling capacity, determination of ash content and water content and adsorption capacity of sodium cholate and NO2- were studied. The results showed that dietary fiber had greater water holding capacity and swelling power, and had obvious adsorption capacity to sodium cholate and NO2-.
