食品添加剂对螺旋藻C-藻蓝蛋白光保护的研究

摘　　要：本实验研究了不同食品添加剂对螺旋藻C-藻蓝蛋白的光保护作用,挑选出了对藻蓝蛋白有光保护作用的食品添加剂,包括糖类、维生素、苯甲酸钠和柠檬酸钠.糖类光保护试验中能产生光保护作用的浓度有3%葡萄糖、3%蔗糖、5%蔗糖和7%蔗糖;维生素C光保护试验中能产生光保护作用的浓度按其保护作用大小依次有2.00 mg/ml,1.00 mg/ml>3.00 mg/ml,0.50 mg/ml>0.25 mg/ml,0.10 mg/ml>0.05 mg/ml;苯甲酸钠光保护试验中有光保护作用的浓度按其保护作用从大到小依次有1.50 mg/ml>2.50 mg/ml>1.00 mg/ml>3.00 mg/ml>0.50 mg/ml;柠檬酸钠光保护试验中具有光保护作用的浓度按其作用大小依次为4.00 mg/ml,2.50 mg/ml,1.00 mg/ml,3.50 mg/ml,3.00 mg/ml,2.00 mg/ml和1.50 mg/ml.在藻蓝蛋白光保护多因素试验中得出最佳光保护组合为:维生素C 2.00 mg/ml、糖0.00 mg/ml、苯甲酸钠1.00 mg/ml、柠檬酸钠1.00 mg/ml,影响光保护作用的主次顺序为:维生素C>糖类>苯甲酸钠>柠檬酸钠.This study investigates the Photo-protection of preservatives on C-phycocyanin, and we have selected some kinds of preservatives which have prominent protection for C-phycocyanin against light, including saccharide, vitamin C, sodium benzoate and sodium citrate. 3% glucose, 3% saccharose, 5% saccharose and 7% saccharose can protect C-phycocyanin in the solution. Vitamin C shows gradient decreased photo-protection on C-phycocyanin when it is under the concentration of 2.00 mg/ml, 1.00 mg/ml, 3.00 mg/ml, 0.50 mg/ml, 0.25 mg/ml, 0.10 mg/ml and 0.05 mg/ml. Sodium benzoate shows gradient decreased photo-protection on C-phycocyanin when it is under the concentration of 1.50 mg/ml, 2.50 mg/ml, 1.00 mg/ml, 3.00 mg/ml and 0.50 mg/ml. Sodium citrate shows gradient decreased photo-protection on C-phycocyanin when it is under the concentration of 4.00 mg/ml, 2.50 mg/ml, 1.00 mg/ml, 3.50 mg/ml , 3.00 mg/ml, 2.00 mg/ml and 1.50 mg/ml. The optimal combination of these four kinds of preservatives on the photo-protection on C-phycocyanin is 2.00 mg/ml vitamin C, no saccharide, 1.00 mg/ml sodium benzoate and 1.00 mg/ml sodium citrate. According to the priority of the photo-protection, the order of the four factors is vitamin C, saccharide, sodium benzoate and sodium citrate.
