摘  要:目的:了解广东省肉类食品中亚硝酸盐含量,分析其分布特点,评估其暴露风险,方法:采集广东省各地销售的肉类食品,对其中亚硝酸盐含量进行测定,并针对其样品包装、采样地点类型、食品类别、采样时间、采样地点等情况分别讨论,最后计算人群食用肉类摄入亚硝酸盐的日均摄入量并以此作为暴露风险评估标准。结果:2012~2016年,从广东省共采集的3844份肉类食品样品中,亚硝酸盐含量的均值为0.00262g/kg,超标率为0.94%。结论:广东省主要肉制品的亚硝酸盐残留情况尚算乐观,且含量和超标率均呈现下降趋势,广东省居民肉类食品中亚硝酸盐的暴露情况对于各年龄段人群来说总体处于安全水平。存在亚硝酸盐残留量过多的样品主要是散装的、流动摊贩销售的肉类食品,其中火腿和火腿肠等食品情况较为突出。Objective : To grasp the content of nitrite in meat products of Guangdong province, analyze its distribution characteristics and assess the exposure risk. Methods : The meat samples in Guangdong were collected and the nitrite content was measured. Packaging, sampling site type, food category, sampling time, sampling locationwere also discussed.Finally, the daily consumption of edible meat intake of nitrite was calculated as standards to assess the exposure risks. Results : The average content of nitrite in meat of Guangdong from 2012 to 2016 was 0.00262 g/kg and the excessive rate was 0.94%. Conclusion : Thenitrite residue of meat in Guangdong was still optimistic and the content as well as the excessive rate of decline were showing a downward trend. The exposure of nitrite in meat products of Guangdong was generally safe. The meat with too much nitrite residue were mainly in bulk or mobile vendors selling, especially the ham and ham sausage.
