摘 要:目的评估深圳市居民膳食中铅暴露水平。方法抽样监测深圳市17类5 198份食品铅含量,结合深圳市2008年膳食营养状况调查数据,采用点评估方法对深圳市居民进行膳食铅的暴露评估。结果深圳市居民每周膳食中铅平均暴露量为12.83 mg/kg·BW,每周膳食中铅暴露量中位数为14.27 mg/kg·BW,每周膳食中铅暴露量(膳食摄入量P90、极端P90)分别为572.86和1 100.32 mg/kg·BW,分别占PTWI的2 291.44%和4 401.28%。深圳市居民膳食中铅暴露的主要来源是蔬菜、粮食和畜禽肉类食品,占每周膳食中铅平均暴露量的60%以上。蔬菜的铅的暴露限值(MOE)最低,为1.67。结论深圳市居民膳食存在铅过量暴露的风险,应进一步开展深圳市居民膳食铅暴露的概率评估。[Objective] To estimate the level of dietary lead exposure of residents in Shenzhen City.[Methods] 5 198 food samples from 17 categories were collected in Shenzhen City to detect the lead content,and the level of dietary lead exposure of residents in Shenzhen City was estimated by the point assessment combined with the data of dietary nutrition survey in Shenzhen City in 2008.[Results]The average level of weekly dietary lead exposure among residents in Shenzhen City was 12.83 mg/kg·BW,and the median of weekly dietary lead exposure was 14.27 mg/kg·BW. The upper 90 th percentile(P90)dietary intake and the P90 maximum of dietary lead exposure per week were estimated to be 572.86 mg/kg·BW and 1 100.32 mg/kg·BW respectively,which account for 2 291.44% and 4 401.28% of PTWI. The main sources of dietary lead exposure of Shenzhen residents were vegetables,foodstuff,and livestock and poultry meat,accounting for more than 60.00% of total dietary lead exposure. The margin of exposure(MOE)of vegetable is the lowest,which was 1.67.[Conclusion]There is the risk of excessive dietary lead exposure in residents of Shenzhen City,and the probability assessment should be carried out to evaluate dietary lead exposure of residents in Shenzhen City.
