摘  要:为了解果蔬保鲜专利技术的现状与发展趋势,作者采用专利分析法对近40年国内外果蔬保鲜专利技术信息进行了系统的分析。结果表明,全球果蔬保鲜技术的发展正迎来第三次高潮;日本、美国和中国是主要的专利技术申请来源国,但美国在国际上具有明显的竞争优势;低温、气调、杀菌仍然是目前果蔬保鲜技术研究的热点,但成膜物质和乙烯抑制剂化合物的制造、剂型、制剂的研发代表着未来的研究方向。In order to investigate the current situation and development tendency in preservative patent technology of fruit and vegetable, the nearly 40 years of preservative patents of fruit and vegetable are collected and analyzed systemicly with patent analysis. The results showed that global preservative technology of fruit and vegetable is in the third climax of development. Japan, United State, and China are the main sources of patents, while US shows an obvious competitive advantage in this field. Controlled atmosphere technology, cold temperature storage, fungicide are still the hot spot of preservative technology research, and the manufacture, dosage form and preparation of coat filming substance and ethylene inhibitor are the developing research direction in the future.
