摘  要:目的建立单位食堂食材采购信息网,推动食材溯源和食品安全管理。方法通过分析传统食材采购中存在的突出问题和现代采购管理的利弊,确定适合本单位的采购模式。结果建立集中采购平台,从供应商评价到食材采购再到质量检测、入库、出库、成品餐检验形成一个完整的闭环体系,通过数据检索实现食材全程质量管理。结论打破单位食堂传统的食材采购模式,建立符合发展要求的采购供应链模式,有助于推动食堂食材的安全管理和质量控制。食材采购链信息化建设使得采购行为透明化,有效规避廉政风险。Objective To establish the food procurement information network for the canteen, so as to promote the food traceability and food safety management. Methods The outstanding problems existed in the traditional food procurement and the pros and cons of modern procurement management were analyzed, and the suitable procurement mode for the canteen was then determined. Results By establishing supply chain platform, a complete closed loop system was formed from the supplier evaluation, food raw material procurement, to quality inspection, entering warehouse, ex-warehouse and inspection of the finished dinner. The food quality management of the entire process could be realized through data retrieval. Conclusion Breaking the traditional procurement model and establishing the procurement and supply chain mode according with the requirements of the current development can be benefit to promote the safety management and quality control of canteen food. The food procurement chain informationization construction can make the procurement transparent, which can avoid integrity risk effectively.
