无糖决明子保健茶的研制

摘　　要：以决明子为主要原料,三氯蔗糖和甜菊糖苷为甜味剂进行复配开发无糖决明子保健茶。采用单因素试验对决明子浸提液的制备进行研究,通过正交试验研究无糖决明子保健茶饮料的制作工艺。最终确定决明子浸提液的最佳浸提工艺为:浸提比例1∶40(g/mL),温度80℃,浸提时间1 h,浸提次数为3次;决明子保健茶饮料的最佳配比:决明子浸提液80 mL,三氯蔗糖稀释液30 mL(0.006%),甜菊糖苷稀释液15 mL(0.003%)。With Semen cassiae as exsperimental material,chlorosucrose and stevia glycosides as sweeteners for distribution,developed the sugar-free health tea of Semen cassiae. Semen cassiae extract preparation were studied by single factor test. Through orthogonal experiment,the optimum conditions were obtained：Semen cassiae extraction process：Semen cassiae and water extraction ratio of 1∶40（g/mL）,temperature 80 ℃,extraction time1 h,extraction times of 3 times. the health tea：Seman Cassiae extract 80 mL,the sucralose diluent 30 mL（0.006 %）,the stevioside dilution 15 mL（0.003 %）.
