摘  要:目的了解江西省食品中沙门菌污染状况及菌株耐药性,为监管部门制定政策措施提供依据。方法沙门菌检测参照GB 4789.4方法,采用微量肉汤稀释法进行药物敏感性试验和结果判读。结果 2014-2016年从4186份食品中检出沙门菌121株,其中检出率较高的为生禽肉(14.1%),生畜肉(13.3%)。血清学鉴定分属19个血清型,居前3位的依次为德尔卑(32.14%)、阿贡纳(18.75%)和肠炎沙门菌(12.50%),112株沙门菌对15种抗生素中的14种产生不同程度的耐药,对红霉素表现为全部耐药,对四环素(58.93%)和氨苄西林(51.78%)的耐药性也较高,生猪肉中分离的耐药沙门菌和多重耐药菌最多。结论生肉制品是食源性沙门菌污染的主要食品,即食类中式凉拌菜和熟肉制品沙门菌也存在一定的污染,应引起足够重视。食源性沙门菌呈高耐药和多重耐药的趋势,尤其是分离自猪肉中的沙门菌耐药情况更严重,应加强耐药菌监测,合理使用抗菌药物。Objective To understand the contamination status and the sensitivities of foodborne Salmonella in Jiangxi Province,so as to provide a basis for relevant departments to set up policy. Methods Food samples were examined by national food safety standard( GB 4789. 4). The drug sensitivity of the isolated strains were determined and judged by using the broth microdilution method. Results 121 strains of Salmonella were detected in 4 186 food samples,The detection rate for poultry( 14. 1%) and livertock( 13. 3%) were higher,and 121 strains belonged to 19 serotypes,S. derby( 32. 14%) 、S.agona( 18. 75%) 、S. enteritidis( 12. 50%) were the main serotypes. The degrees of resistance of 121 Salmonella strains to14 antibiotics were different with the highest resistance to Erythromycin( 100. 00%),followed by Tetracycline( 58. 93%)and Ampicillin( 51. 78%). The strains which were single or multidrug resistant were the most detected in pork. Conclusion The raw meat which contaminated by Salmonella are mainly foods. The cooked meat and salads are also contaminated by Salmonella. So foodborne Salmonella with multiple antimicrobial resistant should be paid more attention. Drug-resistant bacteria monitoring should be strengthened and antimicrobial agents should be used rationally.
