‘金草鱼’和普通草鱼肌肉营养成分比较分析及其营养价值评价

摘　　要：【目的】比较分析‘金草鱼’与普通草鱼肌肉营养成分的异同,旨在进一步了解‘金草鱼’的开发利用价值.【方法】对‘金草鱼’和普通草鱼肌肉中的主要营养成份、氨基酸、脂肪酸以及矿物元素含量进行了比较分析,并对其营养价值进行了评价.【结果】‘金草鱼’脂肪显著高于普通草鱼,水分显著低于普通草鱼,但粗蛋白和灰分差异不显著.‘金草鱼’和普通草鱼肌肉16种氨基酸总量分别为17.99%和17.43%,其中7种必需氨基酸分别占氨基酸总量的41.25%和41.37%;‘金草鱼’鲜味氨基酸总质量分数显著高于普通草鱼;必须氨基酸指数分别为79和78.金草鱼肌肉中脂肪酸种类比普通草鱼少2种(C21∶0和C20∶3),饱和脂肪酸总含量和多不饱和脂肪酸含量比普通草鱼低.‘金草鱼’和普通草鱼都含有较丰富的矿物元素,‘金草鱼’肌肉中矿物质总量比普通草鱼高,金草鱼的铜、铁、锌的比值较普通草鱼更为合理.【结论】与普通草鱼相比,‘金草鱼’具有较好的鲜味程度和更为合理的矿物元素组成.【Objective】To further understand the development and use of gold value,the nutrition composition in muscle of gold grass carp and common grass carp was compared and analyzed.【Method】The nutritive compositions in the muscle of gold grass carp and common grass carp were analyzed and the nutritive quality was evaluated.【Result】The results showed that the crude fat in the muscle of gold grass carp was significantly higher than that of common grass carp,while its moisture was significantly lower than that of common carp,but there was no significant difference in the crude protein and ash in the muscle between the two kinds of fish.The total content of amino acids in the muscle of gold grass carp and common grass carp were17.99% and 17.43%,respectively.The total 7 kinds of essential amino acids accounted for41.25% and 41.37% of the total amino acids,the ratio of EAA/NEAA is 70%,and the total delicious amino acid of gold carp was significantly higher than that of common carp.The EAAI of gold grass carp and common grass carp were 79 and 78.The fatty acids in the muscle of the gold grass carp were two kinds less than those of the common grass carp（C21∶0 and C20∶3）,the total saturated fatty acid content and polyun-saturated fatty acid content lower than those of grass carp.Gold grass carp and common carp contained abundant mineral element,the total mineral elements and the ratio of calcium and phosphorus in the muscle of gold grass carp were higher than the common grass carp.The ratio of copper,iron and zinc of gold grass carp was more reasonable than that of the common grass carp.【Conclusion】It was indicated that the gold grass carp was one of the fresh water fish with good taste and more reasonable mineral element composition.
