摘 要:目的了解阜阳市食品中食源性致病菌污染状况,为食品安全风险评估和控制食源性疾病提供科学依据。方法按照《2016年国家食品污染和有害因素风险监测工作手册》中的标准操作程序,对市售7类食品进行金黄色葡萄球菌、沙门菌、蜡样芽胞杆菌、单核细胞增生李斯特菌、阪崎肠杆菌、副溶血性弧菌共6种致病菌检测。结果共检测样品205份,检出阳性菌株29株,总检出率为14.15%(29/205),其中单核细胞增生李斯特菌10株、蜡样芽胞杆菌9株、副溶血性弧菌6株、沙门菌2株、金黄色葡萄球菌2株。结论阜阳市售食品存在不同程度的食源性致病菌污染,主要污染菌为副溶血性弧菌、单核细胞增生李斯特菌、蜡样芽胞杆菌。Objective To investigate the contamination status of foodborne pathogens in food in Fuyang,so as to provide scientific basis for food safety risk assessment and control of foodborne diseases. Methods According to the standard operating procedures in the National Handbook of Food Contamination and Risk Factors Monitoring in 2016,6 kinds of pathogenic bacteria,such as Staphylococcus aureus,Salmonella,Bacillus cereus,Listeria monocytogenes,and Vibrio parahaemolyticus,were detected in seven kinds of food sold in Fuyang. Results A total of 205 samples were detected,and positive strains were detected in 29 strains,with the total detection rate of 14. 15%( 29/205),among which,10 strains were Listeria monocytogenes and 9 strains were Bacillus cereus,6 strains were Vibrio parahaemolyticus,2 strains were Salmonella,2 strains were Staphylococcus aureus. Conclusion Foodborne pathogens in Fuyang have different levels of foodborne pathogenic bacteria,and the main contaminating bacteria were Vibrio parahaemolyticus,Listeria monocytogenes,and Bacillus cereus.
