摘  要:利用顶空固相微萃取法,结合气相色谱-质谱联用技术对脯氨酸美拉德反应产物的挥发性成分进行分析,对SPME条件包括萃取头的选择、萃取温度和萃取时间进行优化。结果表明,最佳固相微萃取试验条件下(100μm PDMS萃取头,80℃下萃取60 min),从脯氨酸美拉德反应物中共鉴定出76种挥发性成分,相对百分含量为74.42%,包括醛类3种(42.94%),杂环化合物15种(6.92%),酯类15种(9.29%),醇类14种(5.98%),烃类13种(3.91%),酮类7种(2.74%),酸类6种(1.87%),烯类3种(0.77%)。就单一物质而言,5-(1-哌啶)-2-呋喃甲醛最高,为35.38%,其次是5-羟甲基糠醛7.04%、邻苯二甲酸乙酸异丁酯3.23%、庚酸酐1.83%、(Z)-9-十六碳烯酸甲酯1.66%、十六醇1.39%等。bThe volatile constituents of Proline Maillard Reaction Products were analyzed by Headspace SolidPhase Microextraction(HS-SPME)combined with Gas Chromatography-Mass Spectrometry (GC/MS) . TheSPME conditions included extraction head selection,extraction temperature and extraction time optimizationwere optimized. The results showed that the optimum extraction conditions were 100 μm PDMS extractionheads,80 益,and 60 min extraction. Under these conditions,76 volatile components were identified fromProline Maillard reaction, with a relative percentage of 74.42%, including 3 kinds of aldehydes(42.94%), 15kinds of heterocyclic compounds (6.92%), 15 kinds of esters (9.29%), 14 kinds of alcohols (5.98%), 13hydrocarbons(3.91%),7 kinds of ketones (2.74%),6 acids(1.87%),3 alkenes(0.77%) . In the case ofasingle substance,Furan-2-carboxaldehyde,5- (1-piperidyl) -was 35.38%,the highest,followed by 5-HMF 7.04%,Phthalic acid,hex -3 -yl isobutyl ester 3.23%,Heptanoic acid,anhydride 1.83%,9-Hexadecenoic acid, methyl ester,(Z) -1.66%, 1-Hexadecanol 1.39%, etc.
