摘　　要：文章从原料、原料处理、稀醪发酵、固态发酵及熏醅等几个方面论述了其对生料制醋的影响,并对生产过程中的一些操作要点做了简要说明。The effects of raw materials＇ treatment , operational points in the raw materials on vinegar production are discussed from the aspects of raw materials, watery mash fermentation, solid fermentation and smoking grains. And some of the production process are briefly described.
