摘 要:针对石榴多酚抗氧化稳定性差的问题,采用复合酶-间歇超声制备多孔淀粉,以玉米多孔淀粉作为载体吸附石榴多酚,研究玉米多孔淀粉吸附石榴多酚的影响因素,正交实验优化得到吸附的最佳条件为:石榴多酚质量浓度为5.0 mg/mL,溶液pH为2,吸附时间60 min,吸附温度30℃。同时探讨了吸附热力学规律,用Freundlich和Langmuir方程拟合并绘制等温吸附线,研究表明吸附过程更符合Freundlich吸附规律(R^2>0.99),其吸附主要是一个自发放热的物理吸附过程。多孔淀粉复合后的石榴多酚自氧化速率显著减慢。This paper aims to study the issue how to increase the stability of the pomegranate polyphenols, firstly, porous starch was prepared by complex enzyme -intermittent ultrasound system, and then, with porous corn starch as carrier of pomegranate polyphenols, the factors to the adsorption of pomegranate polyphenols by porous corn starch were studied. The orthogonal optimization experiment was carried out and the results showed that optimum adsorption conditions were as follows:pomegranate polyphenols concentration,5.0 mg· mL^-1;pH 2.0, adsorption time,60 min; adsorption temperature 30 ℃. at the same time, the adsorption thermodynamic characteristic was explored, and Langmuir equation and Freundlich equation were used respectively to fit. At last, the isotherm was mapped. It turned out that the adsorption isotherm was well represented by the Freundlich equation (R^2 〉 0.99), and such adsorption was a spontaneous exothermic physical adsorption process, the auto - oxidation rates of pomegranate polyphenol turned to a significantly slower rate after pomegranate polyphenol was adsorbed by the porous starch.
