摘 要:对葡萄皮色素提取方法、功能结构进行介绍,通过溶剂浸提法对其进行了提取,最后对葡萄皮色素的稳定性进行探究。采用单因素试验的方法,对溶剂浸提法中的各项条件:提取剂的p H值、提取剂的温度、提取浓度、提取次数、提取的液料比对葡萄皮中葡萄皮色素提取的影响,得到的最佳条件设计响应面模型,最后对葡萄皮色素进行稳定性的探究。根据单因素得到的最佳条件设计响应面模型,由响应面试验确定出最终的最佳试验条件。试验表明,溶剂浸提法的最佳提取条件为:提取温度70~℃,乙醇浓度60%,液料比10∶1(m L/g),提取次数3次,提取剂p H值为1。在此最佳试验条件下,葡萄皮色素提取浓度为7.163 5 mg/g。The extraction method and functional structure of grape skin pigment were introduced and extractedby solvent extraction method. Finally,the stability of grape skin pigment was explored. The single factor testmethod was: the pH of the extraction, the temperature of the extraction, the concentration of the extraction, thetimes of extraction,and the extraction of the grape skin. Then optimal conditions were obtained and thecorresponding surface model was designed. Finally,the stability of the grape skin was explored. The bestconditions response surface model was concluded by the single factor text. The final best experimental conditionsdesign by the response surface experiment. The optimum extraction conditions were as follows:extractiontemperature was 70 益, ethanol concentration was 60%, ratio of liquid to material was 10 颐 1 (mL/g),extractiontimes was3,extraction agent pH was 1. Under the optimum experimental conditions,the extractionconcentration of grape skin was 7.163 5 mg/g.
