摘  要:桑叶不仅是养蚕的饲料,也是传统的中药材之一。桑叶中含有丰富的蛋白质、多糖、黄酮类、生物碱类、游离氨基酸以及挥发性化合物等具有特殊生理活性的功效成分,是开发药物或功能食品的天然原料。我国的桑品种资源丰富,分布范围广泛,桑叶中的营养与功效成分及其含量同桑品种、植株部位、采收季节和产区都有关系,桑叶指纹图谱可以鉴别由上述因素造成的营养与活性成分差异,进而科学评价桑叶的药、食用品质。已有研究者采用色谱法对桑叶中的功效成分进行测定,并初步建立了桑叶相关功效成分指纹图谱。本文归纳气相色谱、高效液相色谱、超高效液相色谱3种常见的用于构建桑叶指纹图谱的方法,为今后建立更加丰富、完整的桑叶指纹图谱库提供技术参考。Mulberry leaf is not only the feed of raising silkworm but also one of the traditional Chinese medicinal herbs. Mulberry leaves are rich in proteins, polysaccharides, fiavonoids, alkaloids, free amino acids, volatile compounds and other functional components. These components have special physiological activities, being the natural raw materials for developing drugs or functional foods. China has abundant mulberry germplasm resources with a wide geographical distri- bution. Nutritional and functional components in mulberry leaf vary with mulberry varieties, plant organs, harvest seas- ons, location and producing areas. Fingerprinting study in mulberry can not only distinguish nutrient and functional com- ponent differences caused by the above factors, but also scientifically evaluate the medicinal and edible quality of mul- berry leaf. Chromatographic method has been used to determine the functional components of mulberry leaf and to es- tablish fingerprints of relevant functional components. In this paper, three kinds of common chromatography, i. e. gas chromatography, high performance liquid chromatography and ultra-high performance liquid chromatography, which can be used to construct mulberry leaf fingerprint, are summarized. This will provide good references for establishing a more abundant and complete database of mulberry leaf fingerprints.
