摘 要:目的了解山西省晋城市市场上婴幼儿谷类辅助食品中阪崎肠杆菌的污染状况,为婴幼儿谷类辅助食品相关标准的制定及安全监管提供数据依据。方法按照GB 4789.40—2010《食品安全国家标准食品微生物学检验阪崎肠杆菌检验》MPN法进行实验室检测。结果 93份样品中检出阪崎肠杆菌的样品数16份,检出率为17.20%,定量结果为15 MPN/100 g^46 MPN/100 g。3类食用方式中,煮熟后食用的阪崎肠杆菌的检出率最高(63.64%);产地方面,国内16个省份的产品中7个省份检出阪崎肠杆菌,其中以中国台湾和河北省的产品污染最严重;采样环节方面,来自专卖店和网购的产品阪崎肠杆菌的检出率高于超市的检出率。结论晋城市婴幼儿谷类辅助食品中阪崎肠杆菌污染严重,对婴幼儿的健康存在潜在威胁。Objective To investigate the Enterobacter sakazakii pollution in cereal supplementary food for infants sold in Jingcheng,so as to provide data basis for standard setting and safety supervision. Methods Laboratory test was performed with MPN method in accordance with GB4789. 40—2010 National Food Safety Standards,Food Microbiological Examination,Enterobacter sakazakii Examination. Results Enterobacter sakazakii were identified in 16 out of 93 samples,with the detection rate of 17. 20%,the quantitative results was 15 MPN/100 g-46 MPN/100 g. Among the 3 types of food,the sample after cooking were with the highest detection rate of Enterobacter sakazakii; and Enterobacter sakazakii were detected in products of 7 out of 16 provinces of China,and the pollution rate was the highest in Taiwan and Hebei; in the sampling aspect,the detection rate of Enterobacter sakazakii of franchised stores and online shopping was far higher than that of supermarkets. Conclusion In Jincheng,the pollution of Enterobacter sakazakii in cereal supplementary food for infants is serious and has potential threat to the health of infants and young children.
