摘 要:藜麦(Chenopodium quinoa),属藜科,一年生双子叶植物,其富含有蛋白质、纤维素、矿物质等全面均衡的营养成分,具有抗氧化、抗癌、降糖、降脂等多种药理作用。藜麦的全植株都具有开发和利用价值。文中综述了藜麦全植株的主要营养成分和营养价值及其生物活性物质在食品和药品等领域的开发利用现状,展望了藜麦全植株的开发利用前景,为拓宽其应用领域及研发新产品提供理论依据。Chenopodium quinoa( quinoa),which belongs to Chenopodiaceae,is an annual dicotyledonous plant. It is rich in balanced nutrients,such as protein,cellulose,minerals,etc.,and has many pharmacological effects,such as anti-oxidation,anti-cancer,hypoglycemia,lipid-lowering and so on. The whole plant of quinoa is of development and utilization value. The paper mainly reviews the main nutritional components and nutritive value of quinoa,and the present situation of the development and utilization of the bioactive substances of whole plant of quinoa in the field of food and medicine. The paper also discusses the development and application prospects of whole plant of quinoa,which will provide theoretical basis for widening its application field and developing new products.
