摘  要:目的掌握防城港市食品中食源性致病菌的污染现状和污染水平,为提高食源性疾病的预警和控制能力提供有力的技术依据。方法 2014—2016年在防城港市辖区内抽取12大类食品样品共1 562份样品开展12种食源性致病菌的分离与鉴定。结果 1 562份食品样本中,共检出食源性致病菌224份,总检出率14.34%,检出的菌株种类包括蜡样芽胞杆菌、金黄色葡萄球菌、副溶血弧菌、铜绿假单胞菌、阪崎肠杆菌、沙门氏菌、致泻性大肠埃希菌等7种;12大类样品中的8大类样品检出致病菌,检出率最高的是水产品、餐饮食品、肉及肉制品等3大类食品。结论防城港市仍然存在不同程度的食源性致病菌污染的情况,同时,反映我市致病菌的污染情况有所增加,特别是散装食品污染较重,针对存在致病菌污染风险较大的食品,有关部门应加大监管力度,防范于未然。[Objective] To know the contamination status and level of food borne pathogens in food in Fangchenggang City,provide a strong technical basis for improving the early warning and control ability of food borne disease. [Methods] 1 562 samples of 12 categories of food were collected from Fangchenggang City during 2014-2016, and 12 kinds of food borne pathogens were isolated and identified. [Results] 224 strains of food borne pathogens were detected in 1 562 food samples, with the total detection rate of 14.34%. There were 7 kinds of food borne pathogens, including Bacillus cereus, Staphylococcus aureus, Vibrio parahaemolyticus, Pseudomonas aeruginosa, Enterobacter sakazakii, Salmonella and diarrheogenic Escherichia coli. The food borne pathogens were detected in 8 categories of food samples, and the detection rate was highest in aquatic products, catering food, and meat and meat products. [Conclusion] There is food borne pathogens contamination at different degrees in Fangchenggang City. At the same time, the food borne pathogens contamination has the rising trend, especially in bulk food. The relevant departments should increase supervision in food with high risk of pathogenic bacteria contamination, to prevent the disease.
