摘 要:目的:探讨不同发酵时间六神曲中淀粉酶、糖化酶、蛋白酶活力的动态变化规律,验证六神曲样品对小鼠肠胃运动的影响,为六神曲最佳发酵周期的确定提供依据。方法:取8批六神曲每天发酵样品,分别测定其中淀粉酶、糖化酶、蛋白酶的活力,选择最佳发酵天数。此后选取最佳天数的六神曲进行药效学验证。结果:淀粉酶、糖化酶活力在第4天达到峰值,蛋白酶活力到第5天达到峰值,以第4天样品进行药效学研究发现其对小鼠肠胃运动有显著影响,同时能显著升高食积模型小鼠的胃泌素、胆碱酯酶含量,降低血清NO含量。结论:六神曲发酵第4天,综合酶活力较高,且经验证有较好的消食作用,因此其最佳发酵时间为第4天左右。Objective:To investigate the dynamic changes of different fermentation time of Liushen Qu amylase, saccharifying en zyme, protease activity, to verify the effect of Liushen Qu samples on gastrointestinal movement of mice, provide the basis for de termining the optimum fermentation period of Liushen Qu. Methods : Eight samples of wholesale fermentation were used to deter mine the activity of three enzymes, and the optimum fermentation days were determined. Then select the best days of Liushen Qu pharmacological experiments. Results: Amylase, saccharifying enzyme activity reached a peak in fourth days, the protease activity reached the peak on the fifth day, the fourth day samples pharmacodynamic study found that it has a significant influence on the gas- trointestinal movement of mice, and could significantly increase the dyspepsia mice gastrin, cholinesterase enzyme content, lower NO content in serum. Conclusion : Liushen Qu fermentation for fourth days, a higher enzyme activity and comprehensive, proven digestion effectively, so the optimum fermentation time was fourth days.
