摘 要:目的了解湖北省市售小龙虾的镉污染状况和居民因食用小龙虾镉暴露水平。方法以分层随机抽样法在湖北省采集小龙虾样品120份,采用国标方法进行检测,采用点评估方法计算小龙虾镉摄入量,初步开展小龙虾中镉的膳食暴露评估。结果湖北省抽样调查地区市售小龙虾中镉含量平均值为0.032 mg/kg,P90和最大值分别为0.082 mg/kg和0.28mg/kg,均未超标;居民每人每次食用1份小龙虾(1 250g)镉暴露量平均值和P90分别为0.17μg/kg和0.43μg/kg;若在食用1份小龙虾的基础上,考虑居民其他食物途径镉摄入量,居民总膳食镉日暴露量平均值和P90为0.37μg/kg和0.63μg/kg,分别占每日可耐受摄入量0.83μg/kg(相当于每月可耐受摄入量为25μg/kg)的44.58%和75.90%。结论湖北省居民通过小龙虾途径的镉摄入量处于安全水平。Objective To understand the cadmium pollution status of crayfish on the market in Hubei Province and the cadmium exposure level of residents due to consumption of crayfish. Methods Stratified random sampling method was used to collect 120 crayfish samples in Hubei Province,national standard method was applied for testing. Point evaluation method was used to calculate the amount of cadmium intake,and preliminary evaluation was developed to estimate the diet exposure level of cadmium in crayfish.Results The average concentration of cadmium in crayfish was 0. 032 mg/kg,the P90 and the maximum value were 0. 082 mg/kg and0. 28 mg/kg,respectively,neither exceeded the standard value. The average value and P90 of cadmium exposure by eating 1 250 g crayfish were 0. 17μg/kg and 0. 43μg/kg,respectively. If considering the cadmium intake of other food besides 1 250 g crayfish,the average and P90 value of the total dietary exposure were 0. 37μg/kg and 0. 63μg/kg,respectively,which accounting for 44. 58% and75. 90% of cadmium ADI 0. 83μg/kg( PTMI 25μg/kg) respectively. Conclusion Cadmium intake through the crayfish route was at a safe level in Hubei Province.
