摘 要:目的了解湖北省市售罐头中有害元素污染状况,为相关部门对罐头产品的卫生质量监督和管理提供可靠的依据,保障食品安全。方法采取随机抽样的原则,采集湖北省部分地区80份罐头样品,用电感耦合等离子体质谱同时测定铅、镉、汞、砷、锰、铝、铬、镍、锡、铜和钒的含量,对其进行统计分析。结果 80份罐头样品中,11种元素的检出率为15.0%~98.8%,其中镉的检出率最低(15.0%),锰的检出率最高(98.8%);不同种类罐头中,锡含量蔬果类中最高,镍含量肉类中最高,铝、钒、铬、锰、铜、砷、镉、汞和铅含量水产类中最高,谷物类中钒和汞均未检出。除2份水产类罐头中砷超标外,其他含量均低于GB 2762—2012《食品安全国家标准食品中污染物限量》。结论湖北省市售罐头有害元素污染较轻,总体上是安全的,但是罐头中砷的污染应该引起关注。Objective To understand the pollution of harmful elements in canned food in Hubei,so as to provide reliable basis for the quality supervision and management of canned products of the relevant departments.Methods 80 samples of canned food were collected from four areas in Hubei by random sampling.The contents of Pb,Cd,Hg,As,Mn,Al,Cr,Ni,Sn,Cu,V were measured by inductively coupled plasma mass spectrometry.And statistical analysis was carried out.Results Among the 80 canned samples,the detection rate of 11 elements was within 15.0%-98.8%,in which the detection rate of cadmium was the lowest(15.0%),and the detection rate of manganese was the highest(98.8%).In different kinds of canned food,tin content was the highest in canned fruits and vegetables,nickel content was the highest in canned meat,the content of aluminium,vanadium,chromium,manganese,copper,arsenic,cadmium,mercury and lead were the highest in canned aquatic products.Vanadium and mercury were not detected in grain.Except that the levels of arsenic in two canned aquatic products exceeded the limits,the contents of other elements were lower than those in GB 2762—2012 National Food Safety Standard Contaminant Limits in Food.Conclusion The qualification of harmful elements in canned food in Hubei was good and safe,while more attention should be paid on As contamination.
