摘  要:用0.5%硫酸-甲醇溶液将鱼肌肉组织的脂肪酸甲酯化,气相色谱法测定了广东湛江海域8种须鲷科鱼肌肉的脂肪酸含量,结果显示,8种须鲷科鱼肌肉饱和脂肪酸(SFA)含量为35.56%~62.28%,单不饱和脂肪酸(MUFA)含量为8.67%~25.69%,多不饱和脂肪酸(PUFA)含量达17.05%~54.15%,二十碳五烯酸(EPA)+二十二碳六烯酸(DHA)达12.41%~34.13%。8种须鲷科鱼具有较高的营养价值,其中红带海绯鲤Parupeneus chrysopleuron和日本绯鲤Upeneus japonicus的EPA+DHA含量分别为30.15%和34.13%,具有较高的开发利用价值。Objective: To determine the content of fatty acids in the muscle tissue of 8 species of Mullidae in Zhanjiang sea area. The fatty acids in the sample were methylated by 0.5% sulfuric acid-methanol solution and determined by gas chromatography. The results showed that saturated fatty acids(SFA) content was between 35.56% to 62.28%, monounsaturated fatty acid(MUFA) content was between 8.67% to 25.69%, polyunsaturated fatty acids(PUFA) content was between 17.05% to 54.15%, and EPA+DHA between 12.41% to 34.13%. The two species of fish, Parupeneus chrysopleuron and Upeneus japonicus, had the amount of DHA+EPA with 30.15% and 34.13% respectively, so they had more nutritional value and provided with more exploitation value.
