摘 要:食源性致病菌是诱发食源性疾病并进而引发食品安全问题的主要因素。氧化锌因其具有良好的抑菌活性,将其作为抑菌材料具有广阔的应用前景。制备获得了棒状、梭状、空心球状以及蜂窝状等4种形貌的氧化锌微/纳米颗粒,并将其与8种常见的食源性致病菌通过抑菌圈法和生长曲线法考察了其抑菌活性,研究表明,氧化锌对不同的食源性致病菌具有不同的抑菌效果,而且氧化锌的抑菌效果与其形貌密切相关。研究结果为氧化锌微/纳米抗菌材料的开发应用提供了的基础数据。Foodborne pathogens inducing foodborne diseases are the main factors of food safety. Having favourable bacteriostasis, ZnO has a wide application prospect as antibacterial material. This study prepared and obtained 4 morphology types of ZnO micro/nano-particles with rodlike, fusiform, hollow spherical and cellular, and tested their bacteriostasis with 8 common foodborne pathogens by inhibition zone method and growth curve method. The results showed that ZnO had different bacteriostasis on different foodborne pathogens, and the bacteriostasis was closely related to its morphology. The above results provided valuable basic data for the development and application of ZnO micro/nanoantimicrobial materials.
